AVOCADO SALAD

Before diving into the main dish, you would love this keto-friendly salad that will lovingly open your palate.

Ingredients for the Dressing:

1/4 cup olive oil
2 tbsp red wine vinegar
1 teaspoon minced garlic
2 teaspoons dried oregano (and extra when serving)
1/4 teaspoon salt

Ingredients for the Salad:

1 large cucumber halved lengthways and sliced
4 vine-ripened tomatoes cut into wedges
red onion thinly sliced
1 green pepper deseeded and sliced
200 grams good quality cubed feta cheese
80 grams pitted olives
1 large diced avocado

Instructions:

In a jug or a jar, whisk together all the dressing ingredients. In a large bowl, mix together all the salad ingredients. Now, toss the dressing and salad ingredients together. Season with extra salt only if you think you need it and how salty your feta cheese is. When serving, you have the option to sprinkle over extra oregano. You can serve with chicken, fish, beef or lamb. The possibilities are endless.

CREAMY GARLIC CHICKEN

Ingredients:

Boneless skinless chicken breasts
Olive oil
Salt
Heavy Cream
Chicken broth
Garlic powder
Italian seasoning
Parmesan cheese
Spinach
Sun-dried tomatoes

Directions:

This well-loved dish is perfect for keto diet adherents.
Make sure the chicken is sliced thinly to make it cook in an even and quick manner.

On medium heat, cook the chicken in a large skillet over olive oil. Do this for 5 minutes (or until brown) on each side and also make sure that the center is not pinkish anymore. You will be sure that the chicken is cooked throughout because the juices will be running clear. The internal temperature of the chicken should be 165 degrees. Remove the chicken and transfer to a plate.

Make a cream sauce by adding together heavy cream, garlic powder, chicken broth, parmesan cheese, and Italian seasoning. If possible, use freshly grated parmesan cheese for more sauce consistency.

Whisk them all together over medium-high heat until they thicken. Add in the spinach and the sundried tomatoes. Just let it simmer until you observe that the spinach is wilting.

With the sauce still in the pan, add the chicken into it.
Can be served with your low carbo pasta, mashed potatoes, or mashed cauliflower. Steamed vegetables and light salads are also great sidings. If you can make homemade garlic bread, it would make a good scraper for your tasty and creamy sauce!
